What do you have in there with it?  Is the chicken frozen?  If it's frozen it will add moisture as it cooks, should be fine.  As long as it's half to mostly covered it should be good.

No, it was thawed. Right now, its only chicken, spices & about 2/3 cup of chicken broth. Its not covering it at all. Later, I will be adding veggies - salsa, rice & beans. Should I add more broth and then drain the broth later before I add everything else?
